Perfect Hard Boiled Eggs in the Rice Cooker

                              



Making the perfect hard boiled egg just got easier if you own a rice cooker. Yes, you read that right. Rice Cooker = Perfect Egg.  No broken eggs, leaky egg whites, grey tinged yolks. No more guess work. Perfect egg. Every. Time.





Step 1.  Fill bottom of rice cooker with 1 cup water.

Step 2.  Place steamer basket insert on top. Place eggs inside. Sitting the eggs up on end versus on their side will center the yolk (if you're making deviled eggs) and give you space for more eggs.


Step 3.  Place cover on rice cooker and turn it on. Set timer for 20 minutes.

Step 4.  Remove eggs from rice cooker using tongs. They are very hot. Place in an ice bath to cool. Eat immediately or place in fridge for up to a week.






                              
 Enjoy!  My kids sure do!  We'll be making a dozen tonight and coloring them for Easter.

Apple Delight Quesadillas

I wanted to share a yummy dessert I threw together.  You can either use the recipe for Warm Cinnamon Apples or a can of apple pie filling. 
My kids fell in love with the combination of the crisp outer layer, warm melty cheese and syrupy sweetness of the apples.  They have already begged me to make it again. 
I love that this is quick, easy, nutritious (sugar can be adjusted or sugar free pie filling can be used) and inexpensive. It's also very versatile.  You can substitute other fruits or pie fillings....i.e. cherry, blueberry, bananas and more.  Enjoy!

Apple Delight Quesadillas

Ingredients

Flour Tortilla Shells (taco size)
Warm Cinnamon Apples (recipe below) or 1 can apple pie filling
cream cheese (I use light cream cheese)
cooking spray

Directions

1. Spray small skillet with cooking spray and heat on medium
2. Lightly spray one side of tortilla with cooking spray
3. Flip tortilla over and lightly spread with cream cheese
4. Take a spoonful of cinnamon apples/pie filling and place on half the tortilla
5. Fold over creating a semi-circle and place in heated skillet
6. When first side is browned flip over and repeat
7. Slide onto plate and enjoy!

***for an extra yummy treat you can sprinkle with cinnamon sugar or top with ice cream.
Warm Cinnamon Apples

Ingredients


4 McIntosh apples, peeled and sliced (about 2 lb.)
1/2 cup firmly packed light brown sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2 tablespoons water
1 tablespoon butter

Preparation

1. Toss together apples, brown sugar, cinnamon and nutmeg in Ziploc bag.
2. Cook apple mixture, 2 Tbsp. water, and 1 Tbsp. butter in a medium saucepan over medium heat, stirring occasionally, 8 to 10 minutes or until apples are tender

The Warm Cinnamon Apples are also a perfect addition to breakfast over oatmeal or a side for dinnertime.  This is also a family favorite that I serve quite often.

Quick yummy treats

I wanted to share a couple easy cookie/bar recipes that my family loves.  Both take barely anytime to put together and the results are yummy.  The first recipe is my version of a S'mores bar.  I made these the first time for my annual cookie party last Christmas.  My mommy friends inhaled them and I had several requests for the recipe.  The second recipe is one I tried and tweaked a bit.  I love lemon cookies and lemon bars but sometimes don't have the time or all the necessary ingredients on hand.  This recipe is almost as easy as one of those packaged cookie mixes.

S'mores Bars

Ingredients:
3/4 cup margarine

3 cups graham cracker crumbs

1 cup chocolate chips

1 cup peanut butter chips

1 cup Heath toffee chips

1 cup mini marshmallows

1 (14 ounce) can condensed milk


Directions:

Prep Time: 10 mins

Total Time: 35 mins

1. Preheat oven to 350
2. In  13 x 9 pan combine margarine with graham cracker crumbs and press into bottom of pan to form even crust.
3. Evenly sprinkle chocolate, peanut butter and toffee chips over crust.
4. Repeat with marshmallows.
5. Drizzle condensed milk over everything.
6. Bake 25 minuters or untill bubbly.
 
Easy Lemon Cookies
 
Ingredients:


1 (18.25 ounce) package lemon cake mix

2 eggs

1/3 cup vegetable oil

1 Tablespoon  lemon juice

1/3 cup confectioners' sugar for decoration

Directions

1.Preheat oven to 350 degrees F
2.Pour cake mix into a large bowl. Stir in eggs, oil, and lemon juice until well blended. Drop by teaspoonfuls onto ungreased cookie sheet.

3.Bake for 11 to 13 minutes in the preheated oven. The bottoms will be light brown, and the insides chewy.

4. Remove from oven and sift confectioners sugar over cookies while still hot.

***If you find the dough too sticky just put in  fridge for 30 minutes.
***You can add more or less lemon juice to taste and add lemon zest to make it pop.
***If you don't have lemon juice, lemon extract can be substituted.
